Most of Balsamic Vinegars of Modena PGI that have wine vinegar as the first ingredient, need an addition of caramel to achieve a dark color. Caramel is a coloring agent and it is indicated on the label as E150d.
The Red seal, despite being our basic product, has a significant percentage of grape must which allows us to avoid the use of caramel.
Despite having a pungent aromatic characteristic, typical of wine vinegar, it has a clean and fresh taste thanks to the raw materials used and the method of aging in barrique.
To be combined with: cooked or raw vegetables, boiled meats, marinated meat or fish. It can be a valid alternative to wine vinegar by adding a bittersweet aftertaste.
