Balsamic Vinegar of Modena P.G.I.
Sangiovese is a grape with a ruby red color, sometimes with violet tones. Its aroma is vinous and delicate and the flavor is dry, harmonious and slightly tannic, with a bitter aftertaste.
It is a more delicate vinegar than that of Lambrusco because the acid part emerges more than the aromatic one.
The result is a very complex, high density Balsamic Vinegar.
